Chicken & Avocado Salad {Mayo-free, Whole30}

Now that the weather if officially warming up, it only makes sense that it’s time to get ready for cook-outs, picnics and crawfish boils.  All those events usually mean potlucks, and if you’re like me, you like to make a dish from scratch and bring it with you.  Most people like to make salads since you can throw everything into a bowl, mix it up and be on your merry way.  This chicken salad came to me when I wanted to try to make it mayo-free.  Don’t get me wrong, I love me some mayo but the ingredients in regular mayo aren’t that stellar.  It wasn’t until I made my own and then discovered this Paleo Mayo that I attempted to make a salad mayo-free.  That’s where this beauty comes in:


I was at a pool gathering with some friends and one of the girls mentioned how her husband can’t stand mayo.  I told her that I had a yummy recipe for chicken salad sans mayo that I would pass along (and now I am finally posting it for her).  It has been in my ‘recipes‘ tab for quite some time but figured it needed its own post so others could give it a try.  Whip it up and let me know how it turns out.  PS: This recipe is perfect to take camping or for when on a Whole30!

Chicken & Avocado Salad {Mayo-free}

chicken & avocado salad

  • cooked chicken, chopped
  • ¼ of a white or red onion, minced
  • 1 celery stalk, finely chopped
  • handful of green grapes, diced
  • 1 boiled egg, diced
  • 1 tsp Dijon mustard (optional)
  • 1 ripe avocado, diced
  • chopped walnuts or pecans (optional)
  • sea salt and pepper to taste
  • ½ of a cucumber cut into disks

Prep Time: 15 minutes

1. Depending on how much you want to make: use an already cooked chicken, either breasts or thighs, and cut into bite-sized pieces.

2. Dice/slice celery, onion, grapes, and egg into small pieces. Toss all ingredients into a bowl.

3. Add diced avocado and walnuts and stir.

4. Stir in a squirt of Dijon mustard-watch out the mustard is spicy. Make sure all ingredients are incorporated together.

5. Sprinkle salt and pepper to taste.

6. Serve mixture on top of sliced cucumbers and enjoy!

Variation–Serve this salad on top of sliced tomatoes, inside a halved avocado, or inside a hallowed out tomato.

Note: If you do like mayo, feel free to add some in to make it creamier!
