eMeals: Meal Planning Made Simple

I’m headed to my favorite city today, with my crunchy friend Casey, so I’ll be back next week to post on our crazy adventures!

In the mean time, remember this post where I talk about being a Dave Ramsey fan?  Well for years I’ve heard him talk about these eMeals and finally tuned in.  The commercial definitely caught my attention as they added meal plans over the years, like Gluten-free.  Well now they have added a Paleo meal plan, and that has totally sparked my interest!  I had a lot of success when I did my cookbook challenges (here, here, here, and here), but don’t think it was very cost effective.  Since I try to shop local, organic, and grass-fed/pasture-raised, it tends to get pricey.  I’m not complaining though.

These eMeal plans give you a specific ingredient list to shop for at various grocery stores, along with the recipes, for either 3, 6, or 12 months.  The crazy thing is the cost.

First you pick you meal plan:

  • Classic
  • Clean Eating
  • Gluten Free
  • Low Carb
  • Low Fat
  • Natural and Organic
  • Paleo
  • Portion Control
  • Simple Gourmet
  • Vegetarian

Then you pick your subscription:

  • 3 months: $21 ($7 per month)
  • 6 months: $35 ($6 per month)
  • 12 months: $58 ($5 per month)

You can also add Weekday Lunches for $4/month and Healthy Breakfast for $3/month, if you need additional help.

I don’t about you, but this sounds like a ‘no excuse to eat right’ kind of plan!  I personally was thinking of doing the Paleo plan for three months to see how it goes.  I figure I spend enough as it is on food, so why not have someone tell me exactly what to shop for?  I think I’ll give it a shot and let you know how it turns out.  Anything has got to help me stick to my budget…especially in the grocery department.

So, are you curious?  Does this sound something for you and your family could benefit from?  Maybe this will give you an idea of what to cook so you’re not tempted to run out for something crappy quick.  Even if you don’t do it forever, it could at least get you started on meal planning-I know I need to get better at it.

Natural Grocers In Denton, Texas

Sorry I’ve been M.I.A. this week, my hubby and I got some stomach bug, so I’ve been wiped out.

I did want to let you know about the grand opening of Natural Grocers in Denton, TX.  If you have never been nor heard of them, check out their site to find the one closest to you.  I love this place and will drive the extra miles, past Sprout’s & Whole Foods, to get the best bang for my buck.

Natural Grocers only sells certified organic produce, naturally raised meats, and in my opinion, have the best prices when it comes to their packaged goods.

I’ve been hooked from the moment their first store opened up and it’s not hard to see why.  Here’s a note from their Director of Marketing:

“We have been around since 1955 and are cornerstoned in Customer Service as well as Nutritional Education. We strive to offer a very large inventory of all natural and organic groceries, dairy items, bulk items, prepacked items, frozen, all natural raised and fed meats and poultry, all natural and GF supplements and a large body care section for the shoppers that are looking for all natural and environmental products at the some of the lowest industry prices.”

I love this store for so many reasons: 1) it’s small so it feels like a neighborhood market, 2) everyone is super friendly there, and 3) they are anti-GMO!  Yeah buddy!

My crunchy friend, Casey, went with Emma and me and we were like kids in candy stores!  We went up and down every aisle, checked and rechecked the fresh, beautiful produce, and were finally able to select our purchases.  I got two Against the Grain pizzas for dinner that night, along with fresh toppings, and Casey ended up with a case of Kombucha for $1.65/bottle!  That is a freakin’ steal…that stuff is normally $3.49 a pop, so she totally loaded up.  We were both loving the Grand Opening specials, that’s for sure.

Also, this new store has a gathering area and shiny, lime green Demo kitchen.  I can definitely foresee some gluten-free/paleo cooking demos coming, and can’t wait to be #1 in line!  Their first event was entitled ‘Bacon Brigade’ and was slated for last night, but sadly I had to miss.  You know I love me some bacon and was bummed I missed the sampling.  Oh well, there’s always next time.

Gardening: How To Ripen Green Tomatoes

It’s not rocket science, but I was on the hunt to ripen my green tomatoes (besides the thought of frying or grilling them).

While searching, I came across this site showing you ’How to Ripen Green Tomatoes.’  Maybe you were like me and finally got tomatoes after all your had work and persistence…in the fall.  The guy at the nursery said it was a possibility, and happily it happened.  Sadly, they were holding tight and wanting to turn red, but the sun just wasn’t enough.  Be strong little root!  The freezes were coming and I was not about to let them go to the composter, especially after going out daily to fight for their lives against those cursed cucumber beetles.  In case you didn’t catch my post on growing your own garden, I name all my plants/herb/veggies so there was no chance of leaving Tommy to die.

First, you are supposed to cut them from the vine, not pull them with the help of a 2-year old, then carefully wrap them in tissue paper or newspaper and put them in a old shoebox.  Next, find a cool spot on the counter and wait.  And wait.  And wait.  Then voilà, you have a red tomato!

We did have two that turned instantly, which was exciting.  Lucky for me I was able to snap a picture before Emma gobbled the whole thing up in 2 seconds flat!  I’m still waiting on the others, but it feels good to know they won’t totally go to waste…fingers crossed.

I’ve also been doing some research on how to save my own seeds.  I bought an Heirloom plant, which means they are original tomato seeds, not contaminated by Monsanto, so I want to keep them around for a long while.  I figure while waiting for them turn, it will buy me some time to find the best option.

Gluten-Free In Dallas: Unrefined Bakery

Remember when I told you last week about Tu-Lu’s Gluten-Free Bakery here in Dallas and NYC? Well, there’s another bakery in town, called Unrefined Bakery (formerly Wholesome Foods Bakery) and they are…

“a totally Gluten-Free bakery created by Anne and Taylor, a mother/daughter Celiac, Lactose-Intolerant duo. We were tired of the crumbly, dry options we found as Celiacs, and the lack of great Gluten-Free and Dairy-Free choices.”

This one is located in East Dallas by White Rock Lake, and I have to say, after poking around down there at one of the farmer’s market, I kind of wished I lived closer.  Though knowing me, I’d be at the bakery every.dang.day and not be sticking to my Paleo lifestyle (stupid dairy and carbs), so it’s probably a good thing.

Speaking of Paleo, they do offer several choices like sandwich bread, dinner  rolls, and even holiday stuffing.  I scored some on my last visit and it was delicious…though I wasn’t too excited about the price.  I know you have to pay more for gluten-free but I guess I should have asked before my heart said yes.  The Paleo bread and rolls are pretty good, though I feel they could use a smidge more salt in them.  It has been a nice substitute, though,  for making the occasional sandwich or for a vehicle for my pulled pork sliders.

The thing that really impressed me is that their products are/use gluten-free, soy-free, organic, unrefined sugars, non-GMO, and more!  It’s not often that I can go anywhere period  to get a gluten-free AND grain-free sandwich with HOMEMADE MAYO.  Get outta town!  Oh, they also use Applegate Farms Organic and Natural lunch meats, so I know I’m getting the best possible option out there (read: no nitrites, nitrates, hormones, etc.).

On top of the homemade mayo goodness, they offer organic almond and coconut milk, for those that want to add  them to their morning Joe without using dairy.  I have to say I love what they are doing but I know I won’t frequent them that often for the sheer fact of my lifestyle.  And maybe it’s because I don’t eat sweets that much anymore, but their sweet treats are sahweeet!  Woo doggy, I am not used to that much sugar…though Emma had no problem gobbling it up.  Too much sugar for this mama’s comfort.

Check them out if you’re ever in town or want to place an order online-they ship nationwide for those peeps who don’t have access to gluten and grain-free fare like I do.

Oh, and I have to add, when I was visiting there the last time, they had just installed three different flavors of Kombucha on tap!  Ha!  Since I’ve finally gotten on the ‘booch train, I will have to check it out next time I’m their neck of the woods.

Going Paleo: Part Tres

I just got back from a week-long roadtrip to my hometown and can’t wait to share a ton of info with you, like my edible shampoo and conditioner!

But first, I think it’s only fair to do one last post on Going Paleo.  See part one and two if you need to catch up.

I was talking to a high school friend the other night, about going paleo, and was raving about how great I feel and how my hubby and I happened to lose weight while eating.  She said she was a busy college girl (studying chemical engineering) and would love it if I could do a post on a breakdown of how I eat throughout the day.  I thought that was a great idea!  Sure I can give you recipes but sometimes people just need you to tell them where to start.  This was right up my alley since I had even printed up menu ideas for newly diagnosed celiacs a few years back.

Like I told my friend-we eat A LOT of eggs.  It’s not uncommon for us to go through two dozen easy in one week.  I feel like the Costco people should know me by now, always coming in babywearing Emma in my Ergo, just to get their two dozen cage-free eggs.  Can I tell you secretly how much I heart Costco?  If you have one close to you, check them out stat.  I will run in there when I’m in a pinch for dinner and grab one of their $4.99 rotisserie chickens, that has no added hormones or antibiotics and is gluten-free.  It usually lasts a couple of meals and is always a good snack when we’re out and about.

A few weeks ago, I happened to snag a pound of their fresh wild-caught sea scallops for a quick dinner and they were delish!

Now don’t get me wrong, just because I stay home with baby girl it doesn’t mean I can’t get in a rut bind with cooking.  I don’t mean to complain about cooking every.single.meal, but it does get old sometimes not having enough leftovers for the following day or for Josh’s lunch.  It constantly feels like I’m doing dishes every time I turn around-blah.  I might have to see if I can tempt my mom to come up and be dishwasher since she’d rather do that than cook.  Ha!  Fat chance.

So to give you a breakdown of what we typically eat during the week, this is what it looks like.  You can check my recipes tab for more inspiration.

Breakfast

-Egg cupcakes with fresh fruit

-Leftover chicken or salmon (breakfast doesn’t have to be just eggs and bacon) with sautéed veggies or a poached egg

-A couple of boiled eggs with fresh fruit and a cup of herbal tea

-Ham and egg cups

-Fried eggs over sweet potato hash with onion and bell pepper

-Scrambled eggs with broccoli, Brussels sprouts, spinach, zucchini, bacon, nutritional yeast, etc. The sky’s the limit with what veggies you could put in your eggs-you could even do an omlette and toss it all in.

Snacks

-Trail mix (any combo of raw nuts with some toasted unsweetened coconut flakes, unsweetened dried cherries, and golden raisins)

-Sliced celery and carrot sticks with fresh ground almond butter

-Boiled egg (these are great to take with you on the go) and piece of fruit

-Fried plantains and fresh guacamole

-Diced tomatoes, cucumbers, zucchini, and avocado with extra-virgin olive oil, balsamic vinegar and garlic powder.  Yum!

-Organic Beef Jerky, LÄRABAR, ReBar, Rise energy bar, or  Tanka bars *I swear by these!

Lunch

-Roasted chicken with cauliflower mash and sautéed Brussels sprouts with fresh garlic in bacon grease or butter

-Grilled wild-caught salmon or cod with broccoli and cauliflower

-Salad with cooked chicken, turkey, or fish and veggies (to your heart’s content) topped with extra-virgin olive oil and balsamic vinegar

-Thai shrimp soup

-Scrumptious salmon chowder

-Homemade chicken, tuna, or salmon salad nested in a tomato or avocado

Dinner

-Bean-less chili

-Sirloin or Chicken Dijon with spinach or kale

-Pork tenderloin with cherry sauce over mashed cauliflower

-Paleo chicken piccata with Brussels sprouts

-Garden-fresh meatballs (can be chopped up with eggs for breakfast)

-Lasagna with zucchini noodles and kale

Dessert

-Bedtime blueberries

-Strawberry shortcakes

-Paleo apple muffins (can be used for breakfast, too)

-Nutty cookies

-Chocolate pudding (made with avocados)

-Sliced banana with almond butter

Yes, it appears that we are constantly eating but it doesn’t seem to be bad for us.  I know veggies give you the fiber that beans never could and protein gives you the energy you need to sustain throughout the day.  I kid you not, I was telling my friend that I had a new-found energy once we went paleo.  As many of you know, toddlers can wear you out, but I would wake up with renewed energy even after only getting six hours of sleep.  No good reason why I go to bed so late-guess I’m a night owl por vida baby!  Like I said, I’m a work in progress in regards to exercise and sleep (it is 12:37 as I write this).

I did want to take a minute to rave about the Everyday Paleo Cookbook by Sarah Fragoso I mentioned in the last post.  In her book, you can find easy, delicious recipes, lunch ideas for kids, a shopping list for 4 weeks of food, AND a workout routine.  You now have no excuse to say ‘I don’t know what to eat or how to work out in going paleo’ especially since it’s only $18!  Sarah also has another book coming out in September called Everyday Paleo Family Cookbook with 80+ new recipes that the family can do together.  I am letting the hubby know I’d like that for the b-day since it comes out around my special day.  She even has a book for kids, called Paleo Pals, to get them started on their paleo journey and help them understand what is happening.

In case you’re wondering what a typical day of grocery shopping looks like (besides the above mentioned Costco), check this out.  The family all headed to Sprouts for some grocery shopping after Josh and I donated some good ‘ole red blood yesterday afternoon.  I think we made out like bandits with all our provisions and spent just under $100!  I still can’t believe it.  This picture shows a boat load of meat, sans two 6-packs of chicken thighs (those were already on the Big Green Egg for dinner), that SHOULD last us a couple of weeks.

Does that help?  I thought it might be easier if you actually have a rundown of how to eat paleo, especially if you don’t know where to start or are intimidated.  I just gradually made the changes and once I felt amazing we just kept going.

Smoothie Queen

I’m sure a lot of you have had a smoothie or two at some time in your life, so it’s not that a big deal when talking about them.  Unless of course you throw everything, including the kitchen sink, in there to make it a meal!  When I was pregnant with Emma, someone at work told me about Dr. Oz’s ultimate pregnancy smoothie and I became intrigued.  I usually started off my day with a smoothie, since I was always running late and had an hour commute, so they seemed quick and easy.  It didn’t take me long after starting my new job that I found out I was pregnant so it became imperative that I get lots of good nutrients in.my.belly.

While I admit I’ve been off Dr. Oz’s bandwagon for some time, he at least got the ball rolling for me in the creative department.  I want to let you in on what I put in my smoothies as of late.  They have changed since having baby girl and even more so now that we have gone paleo.  First, I’ll show you some of the ingredients I put in there, then list them for you.  I have also found you can seriously put anything in there-like chia and flax seeds to get your omega-3s (if you haven’t heard of them, get them in your fridge now!) .  I will say I was blessed to get my mom’s Vitamix that she no longer uses and have to say it’s AMAZING!  That thing can grind up anything, peel and all!

This is how I make my smoothies including some extra goodies in there (sorry I don’t have exact measurements-I usually eyeball it):

  • frozen berries/peaches/mangoes/etc
  • coconut yogurt
  • 1 TBSP chia seeds
  • 2 TBSP flax seeds (you can buy them whole and ground ‘em yourself)
  • a handful of spinach or kale
  • small piece of celery
  • carrots
  • frozen broccoli
  • half an avocado
  • half an apple
  • sliver of lime
  • some coconut or almond milk
  • a spoonful of almond butter
  • an egg (haven’t tried it yet but know people do it)
  • 1 banana

I don’t usually add ice due to the frozen fruit and if I run out of almond milk I will add some water ’cause that puppy can get thick!  Play around with it and see what strikes your fancy.

The point is a smoothie can be very beneficial to get your necessary nutrients when you are in a pinch (especially when you are prego).  Your smoothie should probably be more green than red but play around with it and see how it goes.
